The Gambia is a small West African country, bounded by Senegal, with a narrow Atlantic coastline. It's known for its diverse ecosystems around the central Gambia River. Abundant wildlife in its Kiang West National Park and Bao Bolong Wetland Reserve includes monkeys, leopards, hippos, hyenas and rare birds.
Gambian cuisine is characterized by its rich flavors and diverse ingredients, heavily influenced by West African culinary traditions. Staple foods include rice, millet, and maize, often accompanied by a variety of sauces and stews. Popular dishes feature fish, chicken, and beef, with peanut sauce being a common accompaniment. Domoda, a peanut stew, and benachin, a one-pot rice dish similar to Jollof rice, are among the most well-known Gambian dishes. The use of fresh vegetables, such as okra, tomatoes, and onions, along with spices and herbs, adds depth to the flavors. Gambian cuisine reflects the country's cultural diversity and reliance on locally sourced ingredients.
