Benachin is a one-pot dish popular in many West African countries, particularly The Gambia and Senegal. Its name translates to "one pot" in the Wolof language. The dish, often referred to as "Jollof Rice", typically includes rice, meat or fish, and a variety of vegetables, all cooked together with spices. The recipe varies across different regions, reflecting the availability of local ingredients.

Recipe

Ingredients:

  • 2 cups of parboiled rice

  • 500g beef or chicken

  • 1 large onion

  • 4 cloves of garlic

  • 1 Scotch bonnet pepper

  • 1 large bell pepper

  • 4 large tomatoes

  • 1 cup of vegetable oil

  • 2 Maggi cubes

  • Salt to taste

  • 1 teaspoon of black pepper

  • 1 teaspoon of thyme

  • 1 cup of mixed vegetables (carrots, green beans, peas)


Instructions:

  1. Start by washing and cutting the meat into small cubes. Then, season with salt, black pepper, and thyme. Let it marinate for about 30 minutes.

  2. While the meat is marinating, chop the onion, garlic, Scotch bonnet, bell pepper, and tomatoes.

  3. Heat the vegetable oil in a large pot and add the marinated meat. Cook it until it's brown on all sides.

  4. Remove the meat from the pot, leaving the oil behind. Add the chopped onions and garlic to the pot and sauté until they become translucent.

  5. Add the chopped Scotch bonnet and bell pepper to the pot and continue to sauté for another 2 minutes.

  6. Add the chopped tomatoes to the pot. Cook until the tomatoes are soft and the oil starts to rise to the top.

  7. Return the meat to the pot and add the Maggi cubes. Stir everything together and let it simmer for about 5 minutes.

  8. Rinse the parboiled rice under cold water until the water runs clear. Then, add the rice to the pot and stir everything together.

  9. Add enough water to the pot to cover the rice by about 1 inch. Cover the pot and let it simmer on low heat until the rice is cooked and all the water has been absorbed.

  10. About 10 minutes before the rice is done, add the mixed vegetables to the pot and stir everything together.

  11. Once the rice is cooked and all the water has been absorbed, turn off the heat and let the Benachin sit for about 5 minutes before serving.
