Domoda is a traditional Gambian dish, often considered the national dish of the country. It is a type of stew made primarily from peanuts, meat (most commonly beef), vegetables, and various spices. The stew is typically served over rice and has a thick, rich consistency due to the use of peanut butter or ground peanuts. The dish is known for its hearty, savory flavors, and is a staple in many West African cuisines.

Recipe

Ingredients:

  • 500g beef, cubed

  • 1 cup peanut butter

  • 2 tablespoons vegetable oil

  • 2 onions, chopped

  • 4 cloves of garlic, minced

  • 1 chili pepper, chopped

  • 2 large tomatoes, chopped

  • 1 tablespoon tomato paste

  • 2 carrots, chopped

  • 1 eggplant, chopped

  • 1 cup pumpkin, chopped

  • 1 cup cabbage, chopped

  • 2 cups of water

  • Salt to taste

  • 1 stock cube

  • 1 teaspoon black pepper


Instructions:

  1. Heat the vegetable oil in a large pot over medium heat.

  2. Add the beef to the pot and cook until browned on all sides. Remove the beef from the pot and set aside.

  3. In the same pot, add the onions, garlic, and chili pepper. Cook until the onions are translucent.

  4. Add the tomatoes and tomato paste to the pot and cook until the tomatoes are softened.

  5. Return the beef to the pot and add the carrots, eggplant, pumpkin, and cabbage. Stir to combine.

  6. In a separate bowl, mix the peanut butter with a little bit of water to make a smooth paste. Add this to the pot.

  7. Add the water, salt, stock cube, and black pepper to the pot. Stir to combine.

  8. Cover the pot and let it simmer for about 2 hours, or until the vegetables are tender and the flavors have melded together.

  9. Serve the domoda hot with rice.
