Recipe
Ingredients:
500g veal, cut into thin strips
1 small onion, finely chopped
2 cloves of garlic, minced
100ml white wine
200ml heavy cream
2 tablespoons flour
2 tablespoons unsalted butter
Salt and pepper to taste
Chopped parsley for garnish
Instructions:
Season the veal strips with salt and pepper, then dust them with flour.
Heat the butter in a large frying pan over medium heat.
Add the veal strips and cook until they are browned on all sides, then remove them from the pan and set them aside.
In the same pan, add the chopped onion and minced garlic, and cook until they are soft and translucent.
Deglaze the pan with the white wine, scraping up any browned bits from the bottom of the pan.
Add the heavy cream to the pan, and bring the mixture to a simmer.
Return the veal strips to the pan, and stir them into the sauce. Cook for a few more minutes, until the veal is cooked through and the sauce has thickened.
Taste and adjust the seasoning with more salt and pepper if necessary.
Serve the Zürcher Geschnetzeltes over rosti or noodles, garnished with chopped parsley.
