Zeama is a traditional Moldovan soup that is often served as a first course. It is typically made from chicken or beef, noodles, vegetables such as carrots and onions, and flavored with parsley and lovage. The soup is known for its slightly sour taste, which is achieved by adding fermented wheat bran, known as bors. Zeama is considered a comfort food and is often served during cold winter months.
Recipe
Ingredients:
1 whole chicken or chicken parts
2 carrots
2 bell peppers
2 onions
2 parsnips
1 bunch of celery
1 bunch of parsley
1 bunch of lovage
1 bunch of dill
1 cup of borscht
2 eggs
1 cup of sour cream
Salt and pepper to taste
2 tablespoons of vegetable oil
Instructions:
Clean the chicken and cut it into pieces. Place it in a large pot and fill it with water, enough to cover the chicken.
Peel and chop the carrots, bell peppers, onions, and parsnips. Add them to the pot.
Clean and chop the celery, parsley, lovage, and dill. Reserve some for garnish and add the rest to the pot.
Bring the pot to a boil and then reduce the heat to low. Let it simmer for about 2 hours, or until the chicken is cooked through and the vegetables are soft.
In a separate bowl, beat the eggs and mix them with the sour cream. Gradually add this mixture to the pot, stirring constantly to prevent the eggs from curdling.
Add the borscht to the pot and stir well. Season with salt and pepper to taste.
Let the soup simmer for another 10 minutes, then remove it from the heat.
Serve the soup hot, garnished with the reserved herbs.
