Zaalouk is a traditional Moroccan salad made primarily from eggplants and tomatoes. It is typically cooked with garlic, cumin, and paprika, and served warm or cold. The eggplants and tomatoes are often grilled before being mashed and mixed with the spices. Zaalouk is commonly served with fresh bread and is a popular accompaniment to many Moroccan dishes.
Recipe
Ingredients:
2 large eggplants
4 ripe tomatoes
4 cloves of garlic
1 bunch of fresh coriander
1 bunch of fresh parsley
1 teaspoon paprika
1 teaspoon cumin
1/2 teaspoon salt
1/4 cup olive oil
Juice of 1 lemon
Instructions:
Start by roasting the eggplants. You can do this on a grill, over a gas stove, or in your oven. The goal is to get the skin blackened and the inside soft. Once they're done, let them cool, then peel off the skin and set the flesh aside.
While the eggplants are cooling, you can start on the tomatoes. Chop them up and put them in a large pan with the olive oil, crushed garlic, paprika, cumin, and salt. Cook this over medium heat until the tomatoes are soft and have formed a thick sauce.
Add the eggplant flesh to the pan with the tomatoes. Use a fork to mash everything together, then let it cook for another 10-15 minutes, stirring occasionally.
While that's cooking, chop up your coriander and parsley. Once the eggplant and tomatoes are done cooking, add in the herbs and the lemon juice. Stir everything together and let it cook for another couple of minutes.
Your Zaalouk is now ready to serve! It can be eaten warm or cold, and it's traditionally served with bread.
