Ingredients:
1 lb yuca (cassava)
Vegetable oil for frying
Salt to taste
Instructions:
Peel the yuca and cut it into 3-inch long pieces.
Boil the yuca pieces in salted water until they are tender, about 20 to 30 minutes.
Drain the yuca and let it cool, then cut the pieces lengthwise into fries.
Heat the vegetable oil in a deep pan or fryer to 375 degrees Fahrenheit.
Fry the yuca fries in the hot oil until they are golden brown, about 5 to 7 minutes.
Remove the fries from the oil using a slotted spoon and drain them on paper towels.
Sprinkle the yuca fries with salt to taste before serving.
