Yovo Doko is a popular street food in Benin, particularly in its capital city of Cotonou. It is a deep-fried doughnut-like snack, made from flour, sugar, yeast, nutmeg, and water. The dough is shaped into balls and fried until golden brown. Yovo Doko is often enjoyed with a side of spicy pepper sauce or peanut sauce.
Recipe
Ingredients:
2 cups of flour
1 cup of sugar
1 teaspoon of nutmeg
1 teaspoon of yeast
1/2 cup of water
Oil for deep frying
Powdered sugar for dusting (optional)
Instructions:
In a large bowl, mix together the flour, sugar and nutmeg.
In a separate bowl, dissolve the yeast in the water.
Gradually add the yeast mixture to the flour mixture, stirring continuously to form a thick batter.
Cover the bowl with a cloth and set aside in a warm place for about 2 hours to allow the batter to rise.
Heat the oil in a deep fryer or large saucepan to 375 degrees F (190 degrees C).
Drop spoonfuls of the batter into the hot oil and fry until golden brown on all sides, about 5 minutes.
Remove the doughnuts with a slotted spoon and drain on paper towels.
If desired, dust the hot doughnuts with powdered sugar before serving.
