Next Dish: Crni Rižot

Yovo Doko is a popular street food in Benin, particularly in its capital city of Cotonou. It is a deep-fried doughnut-like snack, made from flour, sugar, yeast, nutmeg, and water. The dough is shaped into balls and fried until golden brown. Yovo Doko is often enjoyed with a side of spicy pepper sauce or peanut sauce.

Recipe

Ingredients:

  • 2 cups of flour

  • 1 cup of sugar

  • 1 teaspoon of nutmeg

  • 1 teaspoon of yeast

  • 1/2 cup of water

  • Oil for deep frying

  • Powdered sugar for dusting (optional)


Instructions:

  1. In a large bowl, mix together the flour, sugar and nutmeg.

  2. In a separate bowl, dissolve the yeast in the water.

  3. Gradually add the yeast mixture to the flour mixture, stirring continuously to form a thick batter.

  4. Cover the bowl with a cloth and set aside in a warm place for about 2 hours to allow the batter to rise.

  5. Heat the oil in a deep fryer or large saucepan to 375 degrees F (190 degrees C).

  6. Drop spoonfuls of the batter into the hot oil and fry until golden brown on all sides, about 5 minutes.

  7. Remove the doughnuts with a slotted spoon and drain on paper towels.

  8. If desired, dust the hot doughnuts with powdered sugar before serving.
