Recipe

Ingredients:

  • 2 large yams

  • 1 large onion

  • 3 cloves of garlic

  • 1 can of diced tomatoes

  • 1 can of coconut milk

  • 2 cups of vegetable broth

  • 1 tablespoon of curry powder

  • 1 teaspoon of turmeric

  • 1 teaspoon of cumin

  • Salt and pepper to taste

  • 2 tablespoons of olive oil

  • Fresh coriander for garnish


Instructions:

  1. Peel and chop the yams into bite-sized pieces.

  2. Chop the onion and mince the garlic.

  3. Heat the olive oil in a large pot over medium heat.

  4. Add the onion and garlic to the pot and sauté until they become translucent.

  5. Add the yams to the pot and stir to combine with the onion and garlic.

  6. Add the curry powder, turmeric, and cumin to the pot and stir to coat the yams.

  7. Add the diced tomatoes, coconut milk, and vegetable broth to the pot. Stir to combine.

  8. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20-30 minutes, or until the yams are tender.

  9. Season the stew with salt and pepper to taste.

  10. Serve the stew hot, garnished with fresh coriander.
