Ingredients:
500g German sausage (Lyoner, Regensburger or Fleischwurst)
1 large onion
4 pickles
3 tablespoons vinegar
2 tablespoons sunflower oil
Salt and pepper to taste
Fresh parsley for garnish
Instructions:
Cut the sausage into thin slices or strips.
Peel and finely chop the onion.
Cut the pickles into thin slices.
In a large bowl, combine the sausage, onion, and pickles.
In a small bowl, whisk together the vinegar, oil, salt, and pepper to make a dressing.
Pour the dressing over the sausage mixture and toss well to combine.
Cover the salad and refrigerate for at least 1 hour before serving to allow the flavors to meld together.
Before serving, garnish with fresh parsley.
