Vepřo knedlo zelo is a traditional Czech dish, commonly known as roast pork with dumplings and sauerkraut. The dish consists of marinated roast pork, bread dumplings (knedlíky), and stewed sauerkraut. It is typically seasoned with caraway seeds, garlic, and other spices. Vepřo knedlo zelo is considered a national dish in the Czech Republic and is widely served in Czech restaurants and households.

Recipe

Ingredients:

  • 800g of pork (shoulder or neck part)

  • 500g of sauerkraut

  • 2 tablespoons of lard or oil

  • 1 onion

  • 1 teaspoon of caraway seeds

  • Salt and pepper to taste

  • 1 cup of milk

  • 2 eggs

  • 3 cups of plain flour

  • 1 teaspoon of baking powder

  • 1 teaspoon of vinegar

  • 1 tablespoon of sugar


Instructions:

  1. Preheat the oven to 180°C (350°F). Season the pork with salt and pepper.

  2. In a roasting pan, heat the lard or oil over medium heat. Add the pork and brown on all sides. Remove the pork and set aside.

  3. In the same pan, add the chopped onion and cook until golden. Add the caraway seeds and cook for another minute.

  4. Return the pork to the pan, add water to cover half of the pork. Cover the pan and put it in the oven. Roast for about 1.5 hours.

  5. While the pork is roasting, prepare the dumplings. Mix the flour, baking powder, salt, and eggs. Gradually add the milk and knead until you get a firm dough. Shape the dough into rolls.

  6. Bring a large pot of salted water to a boil. Add the dumplings and cook for about 20 minutes. Remove from the water and let them cool.

  7. For the sauerkraut, heat some lard or oil in a pan, add the sauerkraut, sugar, vinegar, and caraway seeds. Cook for about 20 minutes.

  8. Once the pork is cooked, remove it from the oven and let it rest for a few minutes before slicing.

  9. To serve, slice the dumplings, place them on a plate with some sauerkraut, and top with the sliced pork. Enjoy your Vepřo knedlo zelo.
