Varenyky, also known as pierogi in some regions, is a traditional Eastern European dish, particularly popular in Ukraine and Poland. This dish consists of dumplings filled with a variety of ingredients such as mashed potatoes, cabbage, cheese, berries, or meat. The dumplings are then boiled and can be served with a range of toppings, including melted butter, sour cream, or fried onions. Varenyky is often enjoyed during festive occasions and is considered a national dish in Ukraine.

Recipe

Ingredients:

  • 2 cups all-purpose flour

  • 1/2 teaspoon salt

  • 1/2 cup water

  • 1 egg

  • 1 tablespoon vegetable oil

  • 1 cup mashed potatoes

  • 1 cup shredded cheddar cheese

  • 1 onion, chopped

  • 1 tablespoon butter


Instructions:

  1. In a large bowl, combine the flour and salt. In another bowl, mix together the water, egg, and oil. Gradually stir the wet ingredients into the flour until the dough comes together.

  2. On a lightly floured surface, knead the dough until firm and smooth. Divide the dough in half, then roll out one half to 1/8 inch thickness. Cut into 3 inch rounds using a biscuit cutter.

  3. To make the filling, mix together the mashed potatoes and cheese. In a skillet, cook the onion in butter over medium heat until browned. Stir the onions into the potato and cheese mixture.

  4. Place a small spoonful of the filling on each round of dough. Fold over, and seal edges by pressing with a fork. Repeat with remaining dough and filling.

  5. Bring a large pot of lightly salted water to a boil. Add the varenyky, and cook until they float to the top, about 5 minutes. Remove with a slotted spoon. Serve warm.
