Torta Tre Monti is a traditional Italian dessert originating from the Republic of San Marino. The name translates to "Three Mountains Cake", signifying the three peaks of Mount Titano in San Marino. It is a layered cake, composed of thin wafers filled with a rich hazelnut cream, and covered in a dark chocolate glaze. This dessert is often served during celebrations and is considered a symbol of the country's culinary heritage.

Recipe

Ingredients:

  • 200 grams of sugar

  • 200 grams of almonds

  • 100 grams of honey

  • 200 grams of wafers

  • 200 grams of dark chocolate

  • 2 tablespoons of rum

  • 100 grams of unsalted butter

Instructions:

  1. Start by roasting the almonds in a pan until they turn golden.

  2. Let the almonds cool down and then grind them into a fine powder.

  3. In a saucepan, combine sugar and honey, and heat them over medium heat until they melt into a syrup.

  4. Add the ground almonds to the syrup and mix well.

  5. Remove the pan from heat and add rum to the mixture. Stir well until all the ingredients are combined.

  6. Spread the almond mixture over a wafer, and then place another wafer on top. Repeat this process until you have used all the wafers and almond mixture. The top layer should be a wafer.

  7. In another saucepan, melt the dark chocolate and unsalted butter together.

  8. Once the chocolate mixture is smooth, spread it over the top and sides of the wafer and almond stack.

  9. Let the torta rest in the fridge for a few hours before serving.
