Tiguadege Na, also known as Peanut Soup, is a popular dish in Mali, West Africa. Recipe
Ingredients:
1 whole chicken, cut into pieces
2 large onions, chopped
4 cloves of garlic, minced
1 can of tomato paste
1 cup of peanut butter
2 large potatoes, diced
2 large carrots, diced
1 cabbage, chopped
2 cups of okra, sliced
1 habanero pepper
Salt and pepper to taste
5 cups of water
2 tablespoons of vegetable oil
Instructions:
Heat the vegetable oil in a large pot over medium heat.
Add the chicken pieces to the pot and brown them on all sides.
Remove the chicken from the pot and set it aside.
In the same pot, add the onions and garlic. Cook until the onions are translucent.
Stir in the tomato paste and cook for a few minutes until it is well combined with the onions and garlic.
Return the chicken to the pot and add the water. Bring the mixture to a boil.
While the chicken is cooking, in a separate bowl, mix the peanut butter with a bit of warm water until it becomes a smooth sauce.
Add the peanut butter sauce to the pot and stir well.
Add the potatoes, carrots, cabbage, okra, and habanero pepper to the pot. Season with salt and pepper.
Cover the pot and let it simmer for about 45 minutes, or until the vegetables are tender and the flavors are well combined.
Serve the Tiguadege Na hot with rice or bread.
