Tibs is a traditional Ethiopian dish, typically made from diced or cubed meat. The meat, often beef or lamb, is stir-fried or sautéed with various spices and vegetables such as onions, garlic, and peppers. It is traditionally served with injera, a sourdough flatbread, or with bread or rice. Tibs can be prepared in a variety of ways, with some versions featuring the addition of tomatoes, rosemary, or wine.

Recipe

Ingredients:

  • 1 pound of beef, cut into cubes

  • 2 tablespoons of vegetable oil

  • 2 onions, chopped

  • 2 cloves of garlic, minced

  • 2 jalapeno peppers, seeded and chopped

  • 1 teaspoon of berbere spice

  • 1 teaspoon of turmeric

  • Salt to taste

  • Freshly ground black pepper to taste

  • Fresh rosemary leaves


Instructions:

  1. Heat the vegetable oil in a large skillet over medium heat.

  2. Add the beef cubes to the skillet and cook until browned on all sides. Remove the beef from the skillet and set aside.

  3. In the same skillet, add the onions, garlic, and jalapeno peppers. Cook until the onions are translucent.

  4. Add the berbere spice, turmeric, salt, and black pepper to the skillet. Stir well to combine.

  5. Return the beef to the skillet and stir well to coat the beef with the spice mixture.

  6. Reduce the heat to low, cover the skillet, and let it simmer for about 20 minutes, or until the beef is tender.

  7. Sprinkle fresh rosemary leaves over the beef before serving.
