Recipe
Ingredients:
1 cup all-purpose flour
1 egg
1 cup ice water
1/2 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon white sugar
2 cups panko bread crumbs
1 quart vegetable oil for frying
2 large bell peppers, cut into strips
2 sweet potatoes, sliced into thin rounds
1 zucchini, cut into thin strips
1 onion, cut into thin rings
1 carrot, cut into thin strips
8 large shrimp, peeled and deveined
Instructions:
In a large bowl, mix together the flour, egg, ice water, baking soda, salt, and sugar until smooth.
Place the panko bread crumbs in a shallow dish.
Heat the vegetable oil in a deep fryer or large saucepan to 375 degrees F (190 degrees C).
Dip the vegetables and shrimp into the batter, then coat with the panko crumbs.
Fry the vegetables and shrimp in the hot oil until golden brown, about 3 to 4 minutes.
Drain on paper towels before serving.
