Tavče Gravče is a traditional Macedonian dish considered to be the national dish of North Macedonia. The main ingredients are white beans, onions, and paprika, often accompanied by sausage or other meats. The dish is typically baked in a clay pot, giving it a distinct flavor. Its name translates to "beans on a tava", with "tava" being a type of ceramic dish or pan used in Macedonian cuisine.
Recipe
Ingredients:
500g dried white beans
2 onions, finely chopped
3 cloves of garlic, finely chopped
1 red pepper, finely chopped
1 green pepper, finely chopped
2 carrots, finely chopped
2 tomatoes, finely chopped
2 tablespoons paprika
1 tablespoon flour
4 tablespoons olive oil
1 bunch of fresh parsley, finely chopped
Salt and pepper to taste
Instructions:
Soak the beans in cold water overnight.
The next day, drain the beans and put them in a large pot. Fill the pot with water until the beans are covered and bring to a boil.
Reduce the heat to low and simmer until the beans are tender. This should take about an hour.
While the beans are simmering, heat the olive oil in a pan over medium heat. Add the onions, garlic, red pepper, green pepper, and carrots. Sauté until the vegetables are soft.
Add the flour and paprika to the pan and stir well. Cook for a couple of minutes.
Add the tomatoes to the pan and cook until they are soft.
Preheat the oven to 200 degrees Celsius.
Drain the beans but keep the water. Mix the beans with the vegetable mixture and add salt and pepper to taste.
Put the mixture in an oven-safe dish and add enough of the bean water to just cover the beans.
Bake in the oven for about an hour, or until the top is crispy and golden.
Sprinkle with fresh parsley before serving.
