Tassot is a traditional Haitian dish typically made from marinated, fried goat or beef. The meat is first marinated in a mixture of citrus and spices, then slow-cooked until tender, and finally fried until crispy. It is often served with rice and a spicy vinegar-based slaw called pikliz. The dish is popularly consumed during special occasions and festivities.
Recipe
Ingredients:
2 lbs of goat meat
1 lime
1 tablespoon of salt
2 tablespoons of vinegar
1 cup of water
1 cup of orange juice
4 cloves of garlic
2 tablespoons of olive oil
1 onion
1 bell pepper
2 sprigs of thyme
2 sprigs of parsley
2 scotch bonnet peppers
2 tablespoons of tomato paste
1 teaspoon of black pepper
1 teaspoon of paprika
1 teaspoon of cayenne pepper
Instructions:
Clean the goat meat with lime and rinse it with warm water.
In a large bowl, mix the goat meat with salt, vinegar, water, and orange juice. Let it marinate for at least 2 hours.
In a blender, blend the garlic, onion, bell pepper, thyme, parsley, and scotch bonnet peppers until smooth.
Heat the olive oil in a large pot over medium heat. Add the goat meat and brown it on all sides.
Add the blended mixture to the pot and mix it well with the goat meat.
Add the tomato paste, black pepper, paprika, and cayenne pepper to the pot and mix well.
Cover the pot and let it cook for about 1 hour or until the goat meat is tender.
Once the goat meat is tender, remove it from the pot and set it aside.
Increase the heat to high and continue cooking the sauce until it thickens.
Return the goat meat to the pot and mix it well with the sauce.
Cook for an additional 10 minutes and then serve.
