Next Dish: Risotto

Tarator is a traditional cold soup popular in the Balkan countries, particularly Bulgaria and North Macedonia. It is typically made from yogurt, cucumbers, garlic, walnuts, dill, vegetable oil, and water. The dish is served chilled and is often consumed in the summer. Variations of Tarator can also be found in Middle Eastern cuisine.

Recipe

Ingredients:

  • 1 large cucumber

  • 2 cups of yogurt

  • 2-3 cloves of garlic

  • 3 tablespoons of dill, finely chopped

  • 1/4 cup of walnuts, finely chopped

  • 1 tablespoon of olive oil

  • 1 tablespoon of vinegar

  • Salt to taste

  • Cold water (optional)


Instructions:

  1. Peel the cucumber and cut it into small cubes.

  2. In a large bowl, combine the cucumber cubes, yogurt, finely chopped garlic, dill, and walnuts.

  3. Add the olive oil, vinegar, and salt to the mixture.

  4. Mix well until all the ingredients are well combined.

  5. If the soup is too thick, you can add some cold water to thin it out.

  6. Chill the soup in the refrigerator for at least an hour before serving.
