Svíčková, or marinated sirloin, is a traditional Czech dish that typically consists of marinated beef sirloin. The meat is roasted and served with a thick sauce made from the marinade, which often includes root vegetables, vinegar, and spices. The dish is usually accompanied by bread dumplings and a topping of whipped cream and cranberry sauce. Svíčková is considered a classic Sunday family meal and is also a common choice for weddings in the Czech Republic.

Recipe

Ingredients:

  • 1kg beef sirloin

  • 150g lard or butter

  • 2 onions

  • 2 carrots

  • 1 parsley root

  • 1 small piece of celeriac

  • 5 allspice berries

  • 10 black peppercorns

  • 2 bay leaves

  • Lemon zest

  • 200ml whipping cream

  • Salt

  • 2 tablespoons flour

  • 1 tablespoon vinegar

  • 4 tablespoons cranberry compote

  • Lemon slices

  • Whipped cream


Instructions:

  1. Clean the vegetables, cut them into cubes and put them in a pot with lard or butter. Add the allspice, peppercorns, bay leaves, and lemon zest. Cook until the vegetables are soft.

  2. In the meantime, prepare the meat. Clean it, dry it, and season it with salt. Then put it in the pot with the vegetables. Roast the meat from all sides until it gets a nice color.

  3. When the meat is roasted, add water just to cover the meat and let it simmer under the lid for about 2 hours.

  4. After the meat is cooked, take it out and strain the sauce. Put the sauce back on the stove, mix the flour with a bit of water and thicken the sauce. Add the cream and vinegar and let it simmer for a few more minutes.

  5. Cut the meat into slices and serve it with the sauce. It is traditionally served with bread dumplings, cranberry compote, a slice of lemon, and a dollop of whipped cream.
