Suya is a popular West African dish, predominantly found in Nigeria and Niger. It is traditionally prepared by skewering and grilling meat, usually beef, ram, or chicken. The meat is marinated in a mixture of peanuts, cayenne pepper, ginger, and other spices, giving it a unique, spicy flavor. Suya is often served with slices of onions, tomatoes, and cabbage.

Recipe

Ingredients:

  • 1 kg of beef (sliced into thin fillets)

  • 1 cup of Suya spice (Yaji)

  • 1/2 cup of vegetable oil

  • 2 stock cubes

  • 1 teaspoon of salt

  • 1 teaspoon of chili powder (optional)

  • 1 onion (for garnish)

  • 1 tomato (for garnish)

  • 1 cucumber (for garnish)

  • Skewers


Instructions:

  1. Rinse the beef and pat dry with a paper towel.

  2. Mix the Suya spice, salt, crushed stock cubes and chili powder in a bowl.

  3. Brush the beef fillets with vegetable oil.

  4. Sprinkle the Suya spice mixture on both sides of the beef fillets, ensuring they are well coated.

  5. Thread the fillets onto the skewers.

  6. Preheat your grill or oven to medium heat.

  7. Grill the skewered beef for 15-20 minutes, turning them every 5 minutes and basting with oil to keep them moist.

  8. Once cooked, remove the Suya from the grill and let it rest for a few minutes.

  9. Garnish with sliced onions, tomatoes and cucumbers.

  10. Serve hot and enjoy your homemade Suya.
