Recipe

Ingredients:

  • 1 lb beef or lamb, cut into small cubes

  • 2 tablespoons vegetable oil

  • 1 large onion, finely chopped

  • 3 cloves garlic, minced

  • 1 green bell pepper, diced

  • 2 medium tomatoes, diced

  • 1 teaspoon turmeric

  • 1 teaspoon cumin

  • 1 teaspoon coriander

  • 1/2 teaspoon ground black pepper

  • Salt to taste

  • 1 cup water

  • 2 tablespoons fresh coriander, chopped


Instructions:

  1. Heat the vegetable oil in a large pan over medium heat.

  2. Add the beef or lamb and cook until browned on all sides. Remove the meat from the pan and set aside.

  3. In the same pan, add the onion, garlic, and bell pepper. Cook until the onion is translucent.

  4. Add the tomatoes, turmeric, cumin, coriander, black pepper, and salt. Cook for a few minutes until the tomatoes are soft.

  5. Return the meat to the pan and add the water. Cover and simmer for about 30 minutes, or until the meat is tender.

  6. Stir in the fresh coriander just before serving. Suqaar can be served with rice or bread.
