Ingredients:
2 tablespoons vegetable oil
1 large onion, chopped
2 cloves garlic, minced
1 large tomato, chopped
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon cayenne pepper (optional)
1 bunch collard greens, kale, or spinach, chopped
1 cup water
2 tablespoons lemon juice
Instructions:
Heat the vegetable oil in a large skillet over medium heat.
Add the onion and garlic to the skillet and cook until they are soft and fragrant.
Add the chopped tomato to the skillet and cook until it is soft.
Season the mixture with salt, black pepper, and cayenne pepper (if using).
Add the chopped greens to the skillet and stir to combine them with the other ingredients.
Pour the water into the skillet and bring the mixture to a simmer.
Cover the skillet and let the mixture cook for about 15 minutes, or until the greens are tender.
