Succotash is a culinary dish consisting primarily of sweet corn with lima beans or other shell beans. It is often combined with a variety of other vegetables, such as tomatoes, bell peppers, and onions. Originating from the indigenous Native American cuisine, its name is derived from the Narragansett word "msíckquatash," meaning "boiled whole kernels of corn." It became popular during the Great Depression due to its affordable ingredients and is traditionally associated with Thanksgiving in the United States.

Recipe

Ingredients:

  • 2 tablespoons of unsalted butter

  • 1 medium onion, finely chopped

  • 1 medium green bell pepper, finely chopped

  • 2 cups of fresh or frozen lima beans

  • 2 cups of fresh or frozen corn kernels

  • 1 cup of cherry tomatoes, halved

  • Salt and freshly ground black pepper

  • 1/2 cup of heavy cream

  • 2 tablespoons of fresh parsley, chopped


Instructions:

  1. Melt the butter in a large skillet over medium heat.

  2. Add the onion and bell pepper to the skillet, cook until they are soft and the onion is translucent, about 5 minutes.

  3. Stir in the lima beans, corn, and tomatoes. Season with salt and pepper to taste.

  4. Cover the skillet and reduce the heat to low. Let it simmer until the vegetables are tender, about 10 minutes.

  5. Stir in the heavy cream and let it cook for another 2 minutes.

  6. Remove from the heat and stir in the chopped parsley before serving.
