Suaasat is a traditional soup dish originating from Greenland. It is often made from seal, whale, reindeer, or seabird meat. Recipe
Ingredients:
500 grams of seal meat
2 onions
3 cloves of garlic
2 tablespoons of oil
1 liter of water
2 tablespoons of flour
Salt and pepper to taste
Freshly chopped thyme and parsley for garnish
Instructions:
Clean the seal meat and cut it into small pieces.
Peel and chop the onions and garlic.
Heat the oil in a large pot over medium heat.
Add the seal meat to the pot and cook until browned on all sides.
Add the chopped onions and garlic to the pot and continue to cook until they are softened.
Pour the water into the pot and bring the mixture to a boil.
Reduce the heat and simmer for about 2 hours or until the meat is tender.
In a small bowl, mix the flour with a bit of water to create a slurry.
Gradually add the slurry to the pot, stirring constantly to avoid lumps.
Continue to cook the soup for another 10-15 minutes until it thickens.
Season with salt and pepper to taste.
Garnish with freshly chopped thyme and parsley before serving.
