Stoofvlees, also known as Carbonade Flamande, is a traditional Belgian dish. It is a slow-cooked beef stew, typically made with dark beer, onions, and a variety of herbs and spices. Recipe

Ingredients:

  • 2 lbs beef stew meat

  • 2 large onions

  • 2 cloves garlic

  • 2 tablespoons flour

  • 2 tablespoons butter

  • 1 bottle Belgian beer

  • 2 cups beef broth

  • 2 bay leaves

  • 2 sprigs thyme

  • 2 slices bread

  • Mustard

  • Salt and pepper


Instructions:

  1. Cut the beef into large chunks and season with salt and pepper.

  2. In a large pot, melt the butter and brown the beef on all sides. Remove the beef and set aside.

  3. In the same pot, add the chopped onions and garlic and cook until they are soft and translucent.

  4. Add the flour to the onions and garlic, stirring until the mixture is well combined.

  5. Return the beef to the pot and add the beer, beef broth, bay leaves, and thyme.

  6. Spread mustard on the slices of bread and place them mustard-side down into the pot.

  7. Cover the pot and simmer for about 3 hours, or until the beef is tender and the sauce has thickened.

  8. Adjust the seasoning with salt and pepper if needed, remove the bay leaves and thyme, and serve the stoofvlees with fries or bread.
