Stoba is a traditional stew dish popular in the Caribbean, particularly in the Dutch Antilles. The main ingredients typically include meat, such as goat (kabritu), beef or chicken, and a variety of vegetables, including potatoes, bell peppers, and onions. The stew is seasoned with local spices and simmered until the meat is tender. It is commonly served with rice or funchi, a cornmeal mush similar to polenta.

Recipe

Ingredients:

  • 2 lbs beef stew meat

  • 2 tablespoons vegetable oil

  • 2 onions, chopped

  • 3 cloves garlic, minced

  • 1 red bell pepper, chopped

  • 1 green bell pepper, chopped

  • 2 tomatoes, chopped

  • 2 tablespoons tomato paste

  • 1 cup beef broth

  • 1/2 cup white vinegar

  • 2 tablespoons soy sauce

  • 1 tablespoon brown sugar

  • 1 teaspoon dried thyme

  • 1 teaspoon dried oregano

  • 1 teaspoon ground cumin

  • 1/2 teaspoon ground allspice

  • 1/2 teaspoon ground cinnamon

  • Salt and pepper to taste

  • 2 potatoes, peeled and chopped

  • 2 carrots, peeled and chopped

  • 1/2 cup pitted green olives

  • 1/4 cup capers


Instructions:

  1. Heat the oil in a large pot over medium-high heat. Add the beef stew meat and cook until browned on all sides. Remove the meat from the pot and set aside.

  2. In the same pot, add the onions, garlic, and bell peppers. Cook until the vegetables are softened.

  3. Add the tomatoes and tomato paste to the pot and stir to combine.

  4. Return the beef to the pot and add the beef broth, vinegar, soy sauce, brown sugar, thyme, oregano, cumin, allspice, and cinnamon. Season with salt and pepper. Bring the mixture to a boil.

  5. Reduce the heat to low, cover the pot, and let it simmer for about 1 hour.

  6. After 1 hour, add the potatoes and carrots to the pot. Continue to simmer for another 30 minutes, or until the vegetables are tender.

  7. Stir in the olives and capers and cook for another 5 minutes.

  8. Taste and adjust the seasoning if needed. Serve the stoba hot.
