Sopa de Pata is a traditional soup from El Salvador, primarily made from the meat of cow's feet. Recipe
Ingredients:
1 cow foot
2 ears of corn
1 lb of yucca
1 lb of taro
1 lb of pumpkin
1 green banana
1 bell pepper
1 onion
2 tomatoes
3 cloves of garlic
1 bunch of cilantro
Salt to taste
Pepper to taste
2 liters of water
Instructions:
Clean the cow foot thoroughly and cut it into pieces.
In a large pot, add the cow foot and water. Bring it to a boil.
While the foot is boiling, chop the onion, bell pepper, tomatoes, and garlic.
Add the chopped vegetables to the pot.
Cut the corn into pieces and add it to the pot.
Peel the yucca, taro, pumpkin, and green banana and cut them into pieces.
Add these to the pot and let everything cook for about an hour.
Add the bunch of cilantro to the pot and let it cook for another 15 minutes.
Season with salt and pepper to taste.
Serve hot and enjoy.
