Sklandrausis is a traditional Latvian dish recognized as part of the country's cultural heritage. It is a small, sweet pie made of rye dough and filled with potato and carrot or pumpkin mash, typically seasoned with caraway seeds. The dish is baked until the filling has a golden-brown crust. Sklandrausis has been granted the "Traditional Speciality Guaranteed" status by the European Union.
Recipe
Ingredients:
500g of rye flour
1 teaspoon of salt
100g of lard
200ml of warm water
500g of peeled and grated potatoes
500g of peeled and grated carrots
1 egg
1 teaspoon of caraway seeds
100g of sugar
1 teaspoon of cinnamon
Instructions:
Preheat your oven to 180°C (350°F).
In a large bowl, mix together the rye flour and salt.
Add the lard to the flour mixture and rub it in with your fingers until it resembles breadcrumbs.
Gradually add the warm water to the mixture, stirring until a dough forms.
Roll out the dough on a floured surface and cut out circles using a cookie cutter or glass.
Place the dough circles on a baking tray lined with parchment paper.
In a separate bowl, mix together the grated potatoes, grated carrots, egg, caraway seeds, sugar, and cinnamon.
Spoon the mixture onto each dough circle, spreading it out to the edges.
Bake in the preheated oven for 30 minutes, or until the edges are golden and the filling is set.
