Sinigang is a popular Filipino soup or stew characterized by its sour and savory flavor. It is typically associated with tamarind (sampalok) but can also be made sour with other ingredients like calamondin, bilimbi, or unripe mango. Recipe
Ingredients:
1 kilogram pork, cut into chunks
1 pack tamarind soup mix
6 cups water
1 large tomato, quartered
1 large onion, quartered
2 green chili peppers
1 radish, sliced
1 bundle string beans, cut into 2 inch pieces
1 bundle kangkong (water spinach), leaves and tender stalks only
1 eggplant, sliced
Salt and pepper to taste
Instructions:
In a large pot, combine the pork, water, tomatoes, onion, and tamarind soup mix. Bring to a boil.
Lower the heat and simmer for about 1 hour or until the pork is tender.
Add the radish and eggplant, and simmer for another 10 minutes.
Add the string beans and kangkong, and simmer for another 5 minutes.
Add the green chili peppers and season with salt and pepper to taste.
Serve hot with steamed rice.
