Silpancho is a traditional Bolivian dish that originated in the city of Cochabamba. The dish consists of a base layer of white rice, followed by a layer of boiled and sliced potatoes, a layer of breaded and fried beef, and a final layer of chopped tomatoes, onions, parsley, and a fried egg. The name "Silpancho" comes from the Quechua words "siilpa" meaning thin, and "pancha" meaning page, referring to the thin, flat nature of the meat used. It is a popular meal in Bolivia and is known for its high caloric content.

Recipe

Ingredients:

  • 1 cup of rice

  • 1 cup of potatoes

  • 1 pound of beef

  • 2 eggs

  • 1 onion

  • 1 tomato

  • 1 bell pepper

  • 1 clove of garlic

  • Salt and pepper to taste

  • Oil for frying


Instructions:

  1. Start by cooking the rice according to the package instructions until it's soft and fluffy.

  2. Peel the potatoes and cut them into thin slices. Fry them in a pan with a bit of oil until they're golden brown and crispy. Set them aside.

  3. Pound the beef into thin, flat pieces. Season it with salt and pepper.

  4. Heat some oil in a pan and fry the beef until it's browned on both sides. Set it aside.

  5. In the same pan, fry the eggs until they're cooked to your liking.

  6. Slice the onion, tomato, and bell pepper. Mince the garlic. Sauté them in a pan with a bit of oil until they're soft and fragrant.

  7. To serve, place a layer of rice on a plate, followed by a layer of potatoes, then the beef, then the fried eggs, and finally top it all off with the sautéed vegetables. Enjoy your Silpancho!
