Shorpo is a traditional Central Asian soup, most commonly associated with Kyrgyz cuisine. It is typically made from mutton and various vegetables such as carrots, onions, and potatoes. The dish is often seasoned with fresh herbs and spices, and it is usually served hot. Shorpo is known for its hearty and rich flavor, making it a popular comfort food in the region.
Recipe
Ingredients:
500g of lamb (with bones)
2 large onions
3 medium-sized potatoes
2 medium-sized carrots
2 bell peppers
3 medium-sized tomatoes
3 cloves of garlic
Salt to taste
Ground black pepper to taste
2 tablespoons of vegetable oil
Fresh herbs (parsley, dill, cilantro)
Instructions:
Rinse the lamb, cut into medium-sized pieces, and put them in a large pot.
Add water to the pot until it covers the meat, bring it to a boil.
Once it boils, reduce the heat to low and simmer for about 1.5 hours.
Peel and cut the onions into half rings, then add them to the pot.
Peel and chop the potatoes into cubes, add them to the pot after 15 minutes.
Peel the carrots and cut into circles, then add them to the pot.
Cut the bell peppers into strips and add them to the pot.
Cut the tomatoes into small pieces and add them to the pot.
Peel and finely chop the garlic, add it to the pot.
Add salt and ground black pepper to taste.
Cover the pot and let it simmer for another 20 minutes.
Chop the fresh herbs and add them to the pot just before serving.
Stir well and serve the Shorpo while it's hot.
