Shopska Salad is a traditional Bulgarian dish popular throughout the Balkans and Central Europe. It is a cold salad made from diced tomatoes, cucumbers, onions, raw or roasted peppers, and sirene (Bulgarian white brine cheese). Occasionally, it is garnished with parsley, olives, or hard-boiled eggs. The salad is named after the Shopi people who live in the Shopluk region that spans parts of Bulgaria, Serbia, and Macedonia.
Recipe
Ingredients:
4 ripe tomatoes
1 cucumber
1 onion
1 red or green pepper
1/2 cup of feta cheese
1/4 cup of parsley, chopped
1/4 cup of sunflower or olive oil
1 tablespoon of vinegar
Salt to taste
Instructions:
Wash all the vegetables thoroughly.
Cut the tomatoes, cucumber, and pepper into small cubes.
Slice the onion thinly.
Combine all the vegetables in a salad bowl.
Sprinkle the salad with salt to taste.
Drizzle the oil and vinegar over the salad.
Mix the salad well to ensure all the ingredients are evenly distributed.
Grate the feta cheese over the top of the salad.
Sprinkle the chopped parsley over the top for garnish.
Serve the Shopska Salad immediately, or refrigerate until ready to serve.
