Sheftalia is a traditional Cypriot dish, commonly served as a type of fast food. It is a type of sausage without skin, made from minced pork or lamb, onions, parsley, and various spices, all wrapped in a casing of caul fat. The dish is typically cooked over charcoal for a distinct smoky flavor. It is often served in pitta bread with salad, lemon, and tahini sauce.
Recipe
Ingredients:
500g of minced pork
1 large onion, finely chopped
A handful of finely chopped fresh parsley
1 teaspoon of ground cinnamon
1 teaspoon of dried oregano
Salt and pepper to taste
100g of suet, finely chopped
6-8 large pieces of caul fat
Instructions:
In a large bowl, mix together the minced pork, chopped onion, parsley, cinnamon, oregano, and salt and pepper.
Add the finely chopped suet to the mixture and mix well.
Cut the caul fat into square pieces, large enough to wrap the mixture in.
Take a spoonful of the mixture and place it in the center of a piece of caul fat.
Fold the edges of the caul fat over the mixture, creating a parcel. Repeat this process until all the mixture is used.
Place the parcels on a preheated grill and cook for about 15 minutes, turning occasionally, until they are browned and cooked through.
Serve the sheftalia hot, with a side of salad or bread if desired.
