Shchi is a traditional Russian soup, predominantly made from cabbage. Recipe

Ingredients:

  • 1 pound of beef

  • 1 large onion

  • 2 carrots

  • 3 potatoes

  • 1 small head of cabbage

  • 3 tablespoons of tomato paste

  • 2 bay leaves

  • Salt and pepper to taste

  • Fresh dill for garnish

  • Sour cream for serving


Instructions:

  1. Cut the beef into small pieces and place it in a large pot with about 2 liters of water. Bring it to a boil.

  2. While the beef is cooking, chop the onion and carrots. Add them to the pot.

  3. Peel and dice the potatoes, then add them to the pot as well.

  4. Cut the cabbage into thin strips and add it to the pot.

  5. Add the tomato paste, bay leaves, salt, and pepper to the pot. Stir everything together.

  6. Reduce the heat to low, cover the pot, and let it simmer for about 2 hours.

  7. After 2 hours, check the soup for seasoning and adjust if necessary.

  8. Serve the soup hot, garnished with fresh dill and a dollop of sour cream.
