Schnitzel is a traditional Austrian dish made from boneless meat, thinned with a meat tenderizer, coated in bread crumbs and fried. The most popular variant is Wiener Schnitzel, which is made from veal. Other variations use pork, chicken, mutton, beef, or turkey. The dish is typically served with a wedge of lemon and either potato salad, mashed potatoes, or fries.

Recipe

Ingredients:

  • 4 boneless pork chops

  • Salt and pepper

  • 1 cup all-purpose flour

  • 2 large eggs

  • 2 cups breadcrumbs

  • Vegetable oil for frying

  • Lemon wedges, for serving


Instructions:

  1. Place each pork chop between two pieces of plastic wrap and pound them until about 1/4-inch thickness.

  2. Season each piece on both sides with salt and pepper.

  3. Place the flour, eggs, and breadcrumbs in 3 separate shallow bowls. Dip each piece of pork into the flour, then shake off the excess. Next, run the pork through the egg to coat it lightly and hold the meat over the liquid to let any excess fall back into the bowl. Finally, lay the pork in the breadcrumbs, turn it over and press it into the breading to coat.

  4. Heat the oil in a deep skillet or deep fryer to about 350 degrees F.

  5. Fry the pork chops until golden brown, about 4-5 minutes on each side.

  6. Remove the pork chops from the oil and drain on paper towels. Serve with lemon wedges.
