Šaltibarščiai is a traditional Lithuanian dish, often described as a cold beet soup. The main ingredients are beets, buttermilk, hard-boiled eggs, cucumbers, dill, and green onions. Recipe
Ingredients:
1 large beetroot
4 cups of kefir
2 cucumbers
4 hard-boiled eggs
4 green onions
1 bunch of dill
1 bunch of parsley
Salt to taste
Boiled potatoes (optional)
Instructions:
Boil the beetroot until it becomes soft. Once it is cooked, let it cool down and then peel and grate it.
Peel and finely chop the cucumbers, green onions, dill, and parsley.
Slice the hard-boiled eggs into small pieces.
Combine the grated beetroot, chopped cucumbers, green onions, dill, parsley, and sliced eggs in a large bowl.
Pour the kefir into the bowl and mix all the ingredients together.
Add salt to taste.
Chill the soup in the refrigerator for a couple of hours before serving.
Serve the soup with boiled potatoes on the side if desired.
