Next Dish: Cachupa
Rösti is a Swiss dish consisting mainly of potatoes, in a style similar to hash browns. It was originally a breakfast dish, commonly eaten by farmers in the canton of Bern, but is now enjoyed all over Switzerland and around the world. The potatoes are grated and then either pan-fried or baked until they form a crispy crust. Variations of the dish may include additional ingredients such as bacon, onion, cheese, apple or fresh herbs.
Recipe
Ingredients:
1 kg waxy potatoes
Salt and pepper
4 tablespoons unsalted butter
4 tablespoons canola oil
Instructions:
Peel the potatoes and grate them coarsely. Place the grated potatoes in a clean kitchen towel and squeeze to remove as much moisture as possible.
Season the grated potatoes with salt and pepper.
Heat 2 tablespoons of butter and 2 tablespoons of canola oil in a large non-stick frying pan over medium heat.
Once the butter and oil are hot, add the grated potatoes, spreading them out evenly over the pan.
Cook the potatoes undisturbed for about 10-12 minutes, until a golden-brown crust forms on the bottom.
Place a large plate over the pan and carefully flip the rosti onto the plate.
Add the remaining butter and oil to the pan, then slide the rosti back into the pan, cooked side up.
Cook for another 10-12 minutes, until the other side is also golden brown.
Slide the rosti onto a serving plate, cut into wedges and serve immediately.
