Riz Gras is a popular West African dish, particularly prevalent in Burkina Faso. Its name translates to "fat rice" in English, alluding to its rich, hearty nature. The dish typically consists of rice cooked with meat, often beef or mutton, and a variety of vegetables, all simmered in a tomato-based sauce. Riz Gras is known for its intense flavors, often enhanced with spices such as garlic, ginger, and chili peppers.

Recipe

Ingredients:

  • 2 cups of rice

  • 1 lb of beef or chicken

  • 1 large onion

  • 3 cloves of garlic

  • 2 tablespoons of tomato paste

  • 1 teaspoon of black pepper

  • 1 teaspoon of salt

  • 1/2 teaspoon of thyme

  • 1/2 teaspoon of rosemary

  • 1/2 teaspoon of paprika

  • 4 cups of water

  • 1/2 cup of vegetable oil


Instructions:

  1. Cut the beef or chicken into chunks and season with salt, pepper, thyme, rosemary, and paprika.

  2. Heat the vegetable oil in a large pot over medium heat. Add the meat and sear on all sides until browned.

  3. Remove the meat from the pot and set aside. In the same pot, add the chopped onions and garlic. Sauté until the onions are translucent.

  4. Add the tomato paste to the pot and stir until it is well combined with the onions and garlic.

  5. Return the meat to the pot and add the water. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 30 minutes.

  6. Rinse the rice under cold water until the water runs clear. Add the rice to the pot and stir well. Cover the pot and let it cook on low heat for about 20 minutes or until the rice is cooked and all the water has been absorbed.

  7. Once the rice is cooked, stir well to combine all the ingredients. Serve the Riz Gras hot.
