Ribel is a traditional Swiss dish, specifically from the canton of St. Gallen. It is made from coarsely ground maize, similar to polenta, and often served with milk, butter, or cheese. The preparation method involves soaking the maize in water overnight before cooking it in milk or water. Ribel is typically eaten for breakfast or dinner and is considered a staple food in the Rhine Valley region.
Recipe
Ingredients:
200 grams of Ribelmais (corn semolina)
1 liter of milk
1 teaspoon of salt
2 tablespoons of sugar
Butter for serving
Instructions:
In a large pot, bring the milk to a boil.
Add the salt and sugar to the boiling milk and stir until they are completely dissolved.
Slowly add the Ribelmais to the pot, stirring constantly to prevent lumps from forming.
Reduce the heat to low and let the mixture simmer for about 45 minutes, stirring occasionally to prevent it from sticking to the bottom of the pot.
After the cooking time, the Ribel should be thick and creamy. If it's too thick, you can add a little more milk.
Serve the Ribel hot with a dollop of butter on top.
