Next Dish: Suaasat
Rechta is a traditional Algerian dish, popular in both Algeria and Tunisia. It consists of homemade noodles, typically served with a chicken, chickpea, and vegetable stew. The dish is often garnished with cinnamon and served with a side of fresh salad. It is particularly enjoyed during special occasions and celebrations.
Recipe
Ingredients:
500g of Rechta noodles
2 large onions, finely chopped
3 cloves of garlic, finely chopped
1 bunch of coriander, finely chopped
1 bunch of parsley, finely chopped
4 small chickens
2 tablespoons of olive oil
1 teaspoon of black pepper
1 teaspoon of salt
1 teaspoon of turmeric
1 teaspoon of cinnamon
1 teaspoon of paprika
1.5 litres of water
4 large carrots, cut into large pieces
4 large zucchinis, cut into large pieces
4 large turnips, cut into large pieces
1 can of chickpeas, drained
Instructions:
In a large pot, add the olive oil, onions, garlic, coriander, parsley, salt, pepper, turmeric, cinnamon, and paprika. Stir well and cook over medium heat for 5 minutes.
Add the chicken to the pot and brown on all sides.
Add the water to the pot and bring to a boil. Then reduce the heat to low, cover the pot, and let it simmer for about 1 hour.
Add the carrots, zucchinis, turnips, and chickpeas to the pot. Continue to simmer for another 30 minutes.
In a separate pot, cook the Rechta noodles according to the package instructions.
Once the noodles are cooked, drain them and add them to the pot with the chicken and vegetables. Stir well to combine.
Serve the Rechta hot, garnished with extra coriander and parsley if desired.
