Raclette is a semi-hard cheese from Switzerland that is usually fashioned into a wheel of about 6 kg (13 lb). It is most commonly used for melting and is also a Swiss dish based on heating the cheese and scraping off (racler) the melted part. The dish is typically served with small firm potatoes, gherkins, pickled onions, and dried meat. It is a popular dish in Switzerland, especially in the canton of Valais, and is also known in parts of France and Germany.
Recipe
Ingredients:
1 Raclette cheese wheel
Small potatoes
Assorted cured meats (such as prosciutto, salami)
Pickles
Pickled onions
Freshly ground black pepper
Baguette
Instructions:
Preheat your raclette grill. If you don't have a raclette grill, you can use a regular oven grill.
Wash the potatoes and boil them in a pot of salted water until they are cooked but still firm.
Slice the raclette cheese into thin slices. The slices should be thin enough to melt easily but thick enough to maintain some substance.
Arrange the potatoes, cured meats, pickles, and pickled onions on a platter.
Place a slice of raclette cheese in each raclette pan and put it under the grill until the cheese is bubbling and golden.
Scrape the melted cheese over the potatoes and meats. Sprinkle with freshly ground black pepper.
Serve with pieces of baguette and enjoy while hot.
