Qurutob is a traditional dish from Tajikistan, often considered the national dish of the country. The main ingredients are fatir (flaky bread), qurut (a type of dried cheese), onions, tomatoes, and sometimes meat. Recipe
Ingredients:
200 grams of qurut (dried yogurt)
1 large onion
2 tomatoes
2 green peppers
4-5 pieces of flatbread
1 bunch of fresh herbs (cilantro, dill, parsley)
1/2 cup of vegetable oil
Salt to taste
1/2 teaspoon of red pepper flakes
1/2 teaspoon of black pepper
Instructions:
Soak the qurut in warm water for about 2 hours until it softens.
While the qurut is soaking, chop the onion, tomatoes, and green peppers.
Tear the flatbread into small pieces and place them in a large dish.
Heat the vegetable oil in a pan, add the chopped onions, and fry them until they turn golden brown.
Add the chopped tomatoes and green peppers to the pan, and continue to sauté until they soften.
Drain the qurut, crush it into a paste, and add it to the pan. Mix well.
Season the mixture with salt, red pepper flakes, and black pepper. Stir well to combine all the ingredients.
Pour the mixture over the torn flatbread in the dish.
Sprinkle the dish with the chopped fresh herbs.
Serve the qurutob warm. Enjoy this traditional Tajik dish with your family and friends.
