Quesillo is a traditional Nicaraguan dish primarily composed of a soft, stringy cheese wrapped in a tortilla, often served with pickled onions. The cheese used is locally known as "Quesillo cheese", which is similar to Mozzarella. This popular street food is typically served in a plastic bag to catch the creamy sauce that is often added. Despite having the same name, it should not be confused with the Venezuelan dessert or the Spanish cheese, both also called Quesillo.
Recipe
Ingredients:
1 can of condensed milk
1 can of evaporated milk
1 cup of sugar
6 eggs
1 teaspoon of vanilla extract
1/2 cup of water
Instructions:
Preheat the oven to 350 degrees F (175 degrees C).
In a saucepan over medium heat, melt the sugar until it becomes liquid and golden. Be careful not to burn it. Pour this caramel into a flan mold, swirling it around to coat the bottom and sides. Set aside.
In a blender, combine the condensed milk, evaporated milk, eggs, and vanilla extract. Blend until smooth.
Pour the milk mixture into the caramel-coated mold.
Place the mold in a larger baking pan and fill the larger pan with about 1 inch of water.
Bake in the preheated oven for 60 minutes, or until set.
Let it cool, then refrigerate for at least 4 hours, or overnight.
To serve, run a knife around the edges of the mold to loosen the Quesillo. Turn it out onto a plate. The caramel sauce will pour over the custard.
