Qebapa is a traditional dish of the Albanians in Kosovo, North Macedonia, Montenegro, and Albania. It consists of grilled minced meat sausages, usually made from a mixture of beef and lamb, with spices such as salt, black pepper, and garlic. The dish is often served with flatbread and sour cream or yogurt. Qebapa is a popular choice at social gatherings and is frequently enjoyed during the summer grilling season.

Recipe

Ingredients:

  • 2 pounds of ground beef

  • 1 pound of ground lamb

  • 2 finely chopped onions

  • 4 minced garlic cloves

  • 1 finely chopped red bell pepper

  • 1 tablespoon of salt

  • 1 tablespoon of black pepper

  • 2 teaspoons of paprika

  • 1 teaspoon of cayenne pepper

  • 1/2 cup of chopped fresh parsley

  • 1/2 cup of chopped fresh mint

  • Olive oil for brushing

  • Flatbread, for serving

  • Sliced onions, for serving

  • Sour cream, for serving


Instructions:

  1. In a large mixing bowl, combine the ground beef, ground lamb, chopped onions, minced garlic, chopped red bell pepper, salt, black pepper, paprika, cayenne pepper, chopped parsley, and chopped mint. Mix well until all ingredients are evenly distributed.

  2. Shape the mixture into sausage-like shapes, about 3 inches long and 1 inch thick. You should have about 20 to 24 sausages.

  3. Preheat your grill or broiler. Brush each sausage lightly with olive oil.

  4. Grill or broil the sausages, turning occasionally, for about 10 to 15 minutes, or until they are browned and cooked through.

  5. Serve the Qebapa hot, wrapped in flatbread, with sliced onions and a dollop of sour cream on top.
