Prekmurska Gibanica is a traditional Slovenian pastry dish originating from the Prekmurje region. It is a layered pastry made with a variety of fillings, including poppy seeds, cottage cheese, walnuts, and apples, often flavored with rum and lemon zest. The dish is baked and then sprinkled with powdered sugar before serving. Recognized as a national specialty of Slovenia, Prekmurska Gibanica has been protected at the European level since 2010 under the Protected Geographical Indication status.

Recipe

Ingredients:

  • 500g puff pastry

  • 500g filo pastry

  • 1kg apples

  • 1kg cottage cheese

  • 1kg poppy seeds

  • 1kg walnuts

  • 1l milk

  • 10 eggs

  • 500g sugar

  • 200g raisins

  • 1 sachet vanilla sugar

  • 1 shot of rum

  • Grated zest of 1 lemon

  • Cinnamon to taste

  • Powdered sugar for dusting


Instructions:

  1. Preheat the oven to 180°C (350°F).

  2. Roll out the puff pastry and place it in a large, deep baking dish.

  3. Prepare the fillings: grate the apples, mix the cottage cheese with half of the sugar, grind the poppy seeds and walnuts, and soak the raisins in rum.

  4. Lay a sheet of filo pastry over the puff pastry in the baking dish. Spread a layer of the poppy seed mixture over the filo, then pour over a mixture of beaten eggs, milk, and a quarter of the remaining sugar.

  5. Lay another sheet of filo pastry on top, then spread a layer of the cottage cheese mixture, followed by the egg and milk mixture.

  6. Repeat this process with the apple mixture and the walnut mixture, adding a new sheet of filo pastry between each layer.

  7. After all the fillings have been used, cover with the remaining sheets of filo pastry. Pour over the remaining egg and milk mixture, and sprinkle with the remaining sugar.

  8. Bake in the preheated oven for about 1 hour, or until golden brown.

  9. Remove from the oven and let it cool. Dust with powdered sugar before serving.
