Pounded Yam is a traditional Nigerian dish made by boiling yam and pounding it until it becomes smooth and stretchy. It is often served with a variety of soups such as egusi, ogbono, or okra. Ingredients:
2 lbs of yam
Water
Instructions:
First, peel the yam and cut it into round slices, about 1 inch thick.
Rinse the yam slices thoroughly in water.
Put the yam slices into a large pot and add water until it's just covering the yam.
Turn on the heat to high and let the yam boil.
Once the yam is soft enough that it can be easily mashed with a fork, drain the water.
Use a mortar and pestle to pound the yam until it becomes a smooth, stretchy dough. If you don't have a mortar and pestle, you can also use a stand mixer with a dough hook.
Your pounded yam is ready to serve. It can be eaten with any soup of your choice.
