Poulet Bicyclette, or Bicycle Chicken, is a popular dish in West Africa, particularly in Burkina Faso and Ivory Coast. The name refers to the lean, free-range chickens used in the dish, which are said to be as tough and lean as a cyclist. It is typically marinated with local spices, grilled, and often served with attiéké or rice. The dish is a staple at street food stalls and is celebrated for its unique, smoky flavor.

Recipe

Ingredients:

  • 1 whole chicken

  • 2 onions

  • 4 cloves of garlic

  • 2 chili peppers

  • 2 carrots

  • 2 tomatoes

  • 1 tablespoon of tomato paste

  • 1 tablespoon of mustard

  • 1 tablespoon of vinegar

  • 1 tablespoon of soy sauce

  • Salt and black pepper to taste

  • 1 liter of water

  • 2 tablespoons of vegetable oil

  • Fresh parsley and thyme for garnish


Instructions:

  1. Clean the chicken and cut it into pieces.

  2. Peel and chop the onions, garlic, chili peppers, carrots, and tomatoes.

  3. In a large pot, heat the vegetable oil over medium heat.

  4. Add the chicken pieces to the pot and brown them on all sides.

  5. Remove the chicken from the pot and set it aside.

  6. In the same pot, add the chopped onions, garlic, chili peppers, carrots, and tomatoes. Cook until the vegetables are soft.

  7. Add the tomato paste, mustard, vinegar, and soy sauce to the pot. Stir to combine.

  8. Return the chicken to the pot and add the water. Season with salt and black pepper.

  9. Bring the mixture to a boil, then reduce the heat and let it simmer for about 1 hour, or until the chicken is cooked through and the sauce has thickened.

  10. Garnish with fresh parsley and thyme before serving.
