Recipe
Ingredients:
125g all-purpose flour
125g buckwheat flour
1/2 teaspoon salt
1 tablespoon caster sugar
1 1/4 teaspoons dry yeast
350ml lukewarm milk
1 egg
50g melted butter
Icing sugar, for dusting
Extra melted butter, for cooking
Instructions:
In a large bowl, combine the all-purpose flour, buckwheat flour, salt, and caster sugar.
In another bowl, dissolve the yeast in a little bit of the lukewarm milk.
Add the yeast mixture, the rest of the milk, the egg, and the melted butter to the flour mixture. Stir until the batter is smooth.
Cover the bowl with a clean towel and let the batter rise in a warm place for about an hour.
Heat a poffertjes pan over medium heat and brush the cavities with some melted butter.
Fill each cavity with batter until it's just below the rim. Cook the poffertjes until they're golden brown on the bottom, then flip them over and cook the other side.
Remove the poffertjes from the pan and keep them warm while you cook the rest of the batter.
Dust the poffertjes with icing sugar before serving.
