Next Dish: Grilled Reef Fish

Poe is a traditional dessert from French Polynesia, especially popular in Tahiti. It is made from baked or steamed banana, papaya, or pumpkin, mixed with manioc (cassava) and coconut cream. The mixture is wrapped in banana leaves and then baked or steamed. The sweet dish is often served with a sauce made from coconut milk.

Recipe

Ingredients:

  • 2 cups of pumpkin or butternut squash

  • 1 cup of brown sugar

  • 1 cup of cornstarch

  • 1 vanilla bean

  • 2 cups of coconut milk


Instructions:

  1. Preheat your oven to 350 degrees F (175 degrees C).

  2. Peel the pumpkin or butternut squash and cut into small cubes.

  3. Place the pumpkin or squash cubes in a saucepan with the brown sugar, the seeds of the vanilla bean, and the coconut milk.

  4. Cook over medium heat for about 20 minutes, or until the pumpkin is soft.

  5. Puree the mixture in a blender or food processor until smooth.

  6. Gradually add the cornstarch to the puree, stirring constantly until well combined.

  7. Pour the mixture into a baking dish and bake in the preheated oven for about 1 hour, or until the top is golden and the poe is set.

  8. Let the poe cool before cutting into squares and serving.
